  • 1 teaspoon vanilla
  • 250 ml of warm milk
  • 80 g melted butter
  • 1 teaspoon grated lemon peel
  • 1.2 kg mere
  • 100 gr sugar
  • 2 tablespoons starch
  • 4 tablespoons hydrated raisins
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1 teaspoon grated lemon peel
  • 2 tablespoons lemon juice
  • 1 egg for greased pie

Method of preparation:

Melt the butter in a saucepan and be careful not to boil it! Then put it in the bowl with flour, add a little salt, beaten eggs, sugar, vanilla and lemon peel.

Add the milk and the yeast, mix lightly and then knead the dough by hand until it doesn't stick at all.

Grease a larger bowl with a little oil, put the dough, cover it with cling film and let it rise in a warm place for about an hour.

Meanwhile, prepare the filling:

Peel the apples, remove the stalks, cut them into cubes and place them in a saucepan.

Sprinkle with lemon juice so they don't oxidize or change color. Add the sugar and starch and put them on the right heat until the sugar melts.

Let the apples cool a bit and add the raisins, vanilla, grated lemon peel and cinnamon. The filling is ready, creamy and fragrant.

How many times do you miss a tender apple pie according to your grandmother's recipe? It should be fresh and steamy with an enticing cinnamon scent that makes you think of childhood and you can't wait to share the tray with your family and close friends…

This summer we spent very pleasant and relaxing moments in Moeciu with our former colleagues and it happened that we enjoyed such a pie together in a wonderful location at Cheile Gradistei. With vanilla ice cream, it's true, and a little small compared to the lust that most of us who ordered it had. Throughout the walk in the area I was watching the appetizing and green apples that were everywhere in the trees in the yard of the locals. I was expecting to find them to buy in front of their gate and, fortunately for me, on the way home I saw an old woman who calmed my soul and let me choose from the two dietary and very healthy varieties, as I told them. recommended before filling my bag.

I immediately ate one with my friends and after a few days, when I had only a few, the idea came to me to prepare this tender apple pie according to my grandmother's recipe. It is very easy to make, although at first sight it is not so, but please believe me that it is worth a little effort, especially if you have in the closet a box of lard from the country that is worth using in this recipe.

Ingredient:

For the dough:

  • 500 gr. flour
  • 180 gr. lard (or 200 gr. butter)
  • 100 gr. powdered sugar
  • 2 sachets of vanilla sugar
  • ¼ teaspoon baking soda
  • 2 eggs
  • 2 tablespoons sour cream
  • 1 teaspoon lemon peel
  • 1 pinch of salt

For the filling:

Preparation method:

1 Mix in a bowl flour with baking soda and a pinch of salt, sugar and vanilla sugar, then add cold lard and knead as gently as possible, if possible with your fingertips, so as to obtain a sandy mixture. in which small balls of fat can still be seen. If you do not want to use your hands, you can also prepare this dough for the robot, using the pulse function several times until you obtain the consistency mentioned above.

2 Add eggs and two generous tablespoons of sour cream, add the peel of a lemon, then combine the ingredients until completely incorporated, without exaggerating with the mixture of dough that can overheat.

3 Divide the dough into two equal parts that are wrapped in cling film and let them cool for at least half an hour.

4 Meanwhile, grate the sour apples and mix with the sugar and a teaspoon of ground cinnamon.

5 Preheat the oven to 170 ° C, line the oven tray with baking paper (mine is 35 & # 21535 cm.) And roll out the first sheet of dough. Use the twister to place it on the bottom of the tray and do not worry if it breaks from place to place or if it is not uniform on the edges. It is only made at home, you can easily fix it and I assure you that the edge will be eaten directly from the tray.

6 Place the grated apples on top and drain a little of the juice left, then place the second sheet of dough on top.

7 Take a fork or a sharp knife and prick the top sheet to make it easier for steam to escape from inside.

8 Bake the apple pie for at least 45-50 minutes at 170 ° C, then sprinkle a generous layer of vanilla-flavored powdered sugar on top and portion as desired.

I didn't stretch it really thin, I somehow it took me a little time and it was easy, so I semi-stretched it about 5-6 times.

Depending on the patience of the chef, we can make a large pie in a detachable cake tray or many pies, in the shape of muffins. I did it one way and the other. For the large pie, I first spread a sheet of dough about 7-8 mm thick. I put it in shape and pressed the edges well so that it does not fall. Let the dough hang out, we will cut it after we finish filling. After the dough is well stretched and glued to the edges, put the cooled apples. For the pies, take a dough roll and press it directly into the molds. We spread another thin sheet of dough and cut thin strips about as small as the little finger for the big pie and as thin as possible for the pies. For my birthday, I received a device with a corrugated wheel, only good for cutting dough, so I used it. We take the cut strips and start placing them on the pie, starting with a cross in the middle. We press their heads well to the edges. Then we will put 2 strips, one on the right, one on the left, followed by one up, one down, and the left, and the right


Of course you can place the strips the way you want, that's how it drove me crazy for the moment and because I liked the final result, I retained the model. Try to keep the strips as even as possible, as well as the distances between them. Continue to the edges. Press the edge strips once more and then cut the excess dough. At the pies I put 4 parallel strips, then over them another 4 strips perpendicular to the first ones. Grease the dough with beaten egg, sprinkle with sugar and put them in the oven heated to 190 degrees. For me, the big pie took about an hour to brown, and the small ones tanned in about 40 minutes. However, look at them from time to time and when they have browned on top, remove them.

Why eat anything else when we can eat pie?

This season of snow, which is coming and not coming, seems to demand such preparations, as simple as they are good.

Even if it's a pie and even if for desserts I said before that we have to take into account the quantities very well, in this case we can relax a little (but a little and not so much that we don't have to do anything).

The dough is made simple. Mix on the robot or with a whisk 200 grams of butter at room temperature cut into cubes with 5 tablespoons of white sugar until it forms like a paste. Add a teaspoon of vanilla essence, 30 ml of brandy, a sachet of baking powder (about 10 grams), a pinch of salt, two eggs and 100 grams of whipped milk (or cream, whatever you want). After the new mixture is homogenized, add, gradually and slowly, one cup of flour (I used about 4 cups), until the dough is no longer sticky and peels off the walls of the bowl in which it is kneaded (do not put much flour from the beginning because you risk coming out a kind of adobe hard to stretch). Cut the resulting dough into two equal parts and spread them out in the shape of the oven tray you will use.

For the filling, clean and grate 2-3 kg of apples and put them in a pot on the fire with 6 tablespoons of sugar and a tablespoon of ground cinnamon. I hardened them until there was no more liquid on the bottom of the pot (they start to stick).

After I put the first sheet in the tray, I spread a spoonful of semolina, I put all the hardened apples, I put another spoonful of semolina, and then the next sheet. To make it easier for you, roll the sheet like a roll around the twister, from the bottom up, and when you place it in the tray, reverse the procedure / unroll.

I greased it with a yolk mixed with a spoonful of water (I like that shiny, cracked effect) and I drilled it with a fork (it is not obligatory but it helps the steam to come out). Bake for 30 minutes at 180 degrees (do the toothpick test) until golden brown.

Do not leave it too long because it dries excessively.

The apple pie is definitely one of my favorites, the tender dough combining wonderfully with the juicy apples.

Almost forgot. Do not forget to be in agreement with the white of the snow and add plenty of powdered sugar and even ice cream. A LOT!

How do we prepare the apple pie recipe?

After leavening, take the dough and divide it into two equal parts. Bake the worktop and spread the first sheet with the help of the foil.

Over this sheet we will put half the amount of apples and we will spread a uniform layer.

We roll the pie then we put it in a tray lined with baking paper. We will do the same with the other piece of dough.

After we have finished shaping the pies, we cut them with a sharp knife and then grease them with egg.

We will put the tray in the preheated oven at 170 degrees Celsius for about 40-50 minutes.
